Kyoto based baumkuchen specialist announces adorable Christmas themed cakes

First opened in Kyoto City’s Minami ward in November 2023, Atelier Kyo Baum is one of Kyoto’s largest confectionary museums.

With a free factory tour that lets you see the baumkuchen creation process in action, Atelier Kyo Baum also runs confectionary making events, which include the opportunity to make your very own mini matcha baumkuchen.

Atelier Kyo Baum also sells freshly made baumkuchen and confectionary to take home or enjoy at their in house café and they’ve just announced 3 new winter additions to their menu.

The new winter menu additions are part of the “Gohobi Baum+”, or “Reward Baum+” series, which are baumkuchen that are intended to be given as a souvenir due to their elaborate nature.

With a special base that doesn’t harden when chilled, the “Reward Baum+” are created by Atelier Kyo Baum’s aptly named “Baum Meisters” who are supremely skilled and knowledgeable about all things baumkuchen.

The first new addition to the menu at Atelier Kyo Baum for winter 2024 is the Reward Baum+ Snowman, which is sure to be a great festive gift:

The Snowman baumkuchen features a filling of freeze dried strawberries and crepe dough wrapped in white chocolate which creates a crunchy texture that’s fun to chew.

A “rare cheese” mousse sits atop the cake to create the snowman’s body, which offers a slightly sour taste to contrast with the sweeter ingredients used as the filling.

The second new menu item is the Reward Baum⁺ Reindeer, which contains the same ingredients as the Snowman baumkuchen, only this time the baumkuchen is topped with a cute reindeer face complete with antlers.

The third and final new menu addition at Atelier Kyo Baum this winter is the Reward Baum⁺ Kamakura Apple, which promises winter elegance in both visual appeal and taste.

Combining apple compote and vanilla mousse to create an igloo like shape, crunchy diced Red Delicious apples mixed with orange pulp await inside the topping.

Homemade custard cream, apple jam and vanilla mousse complete the lower filling and perfectly complement the slightly acidic flavours of apple and orange in the topping.

All three new baumkuchen in the Reward Baum⁺ range are priced at 680 yen to take-out and 693 yen to eat in.

Take-out orders can be placed at Kyo Baum Lab on the first floor of Atelier Kyo Baum, whilst eat-in orders can be placed at Kyo Baum Café on the third floor.
